Here the potatoes are getting cooked. The potato is getting ready.
First, you fried the potatoes in the onion and then boiling it in the curry. They fry the onions in the oil. When they turn red water is added to it and put the potatoes along with chilies and salt.
once the potatoes are done we take them out and to the gravy, we will add the mutton to be cooked. Everything will be 70 % done. The specialty of the Kolkata biryani is the potatoes.
After taking out the potatoes meat is added to the leftover gravy ginger garlic, fragrance, milk, and curd.
After being cooked for 45 mins the cauldron was removed from the stove and to it was added milk, lemon juice biryani masala, potatoes Khoya, and little water.
Before being put on the Dum, the rim of the cauldron is lined with dough. On the other hand began the process of preparing rice with clove, cardamom, and cinnamon. So much heat is coming out of this.

What’s the quantity in one cauldron?
It is good for nearly 100 individuals. After being 70% cooked the rice is ready to be layered. Here they layered it twice.
After putting the first layer a mixture of milk and saffron was added to it then went the next layer of rice on which was added to another mixture made with rose water, Kewra, and saffron.
Finally, the cauldron was sealed and placed on the fire. After some time the cauldron was removed from the strong fire and kept over embers. The biryani was ready and it was time to dispatch them to the hotel.
It was also time to bid good bye to the master cooks. It smells great.
After opening the cauldron ghee was added on top of the biryani. After mixing it with nimble hands began the process of serving.

The name of this restaurant is Dada Boudi which means Brother and sister in law. Is there any story behind the name?
Earlier its name was Janata Hindu Hotel. When uncle and aunty sat here at the counter everybody used to call them Dada and Boudi. That’s how it got the name Dada Boudi.
Dada Boudi is the name conferred to us by the customer. We didn’t choose it. The customers gave us this name. We liked it and so we stuck to it.
How old is the restaurant Dada Boudi?
The Dada Boudi Biriyani Barrackpore shop is nearly hundred years old but biryani is being served since more than 40 years. Since the time I have come, I can see the queue at the entrance.
We first try all the thing by ourselves when the rice comes from outside.
Mr. Bapi of Dada Boudi Biriyani restaurant continued: We cook and try it our self. If we like it then we serve it to the customers. The quality is thoroughly maintained. Yes, the quality is 100 % maintained.
We handpick the ingredients. We don’t take any random piece of a goat. We bring the Raan, Seena, Chaap, etc. The parts that enhance the taste of the biryani we choose and select.
The colored rice is genuinely made with saffron. The yellow-colored rice We add saffron to it. There isn’t any essence or perfume you will find in Dada Boudi Biriyani. All these are conducted by our owner himself.
15-20 kinds of masalas are required for the biryani. He himself dry and pound them and get them ready. The whole system is conducted by the owner himself.
It is not that he get the marketing done by others. He does it himself. So the specialty is that you source your ingredients on your own. Every day you carry out the quality check. That results in this amazing biryani.
How is the Dada Boudi Biriyani (Kolkata Biriyani) is different from other biryani’s?
Compared to other states, the people of Kolkata or Bengal they are ahead of others in terms of eating. And If you go to Lucknow, there the biryani doesn’t have potatoes.
In Dada Boudi Biriyani restaurant, without potatoes, its like 0.01 % of people would want it without potatoes. If you go out of Kolkata Or Bengal, they don’t add potatoes to the biryani.
In Lucknow, they don’t add potatoes. In Hyderabad too they don’t add potatoes.
But if we serve it without potatoes Customers will ask why didn’t you put potatoes. And ours is a little spicy You won’t feel any problem after having it?
